I’ll start… here’s the recipe for those Almond Dark Chocolate Chip Cookies I brought in during the benchmark workout last weekend. They are super simple to make. Total time with prep and baking is no more than 20 minutes!

    No picture. I made a delicious veggie stir fry and couldn’t decide what liquid to use for the sautee.. I ended up using extra virgin olive oil and adding balsamic vinegar just before serving. Absolutely no leftovers!!!

    Here is what we had for dinner tonight:

    One Pot Beans & Quinoa
    1 small onion
    2 garlic cloves, minced
    1 tsp oil
    1/3 C veg stock or water
    1/3 C quinoa
    1 19-oz can black beans
    1/2 tsp cumin
    1/4 tsp salt
    1/4 tsp black pepper
    1/4 cup frozen corn
    1-2 tbsp fresh cilantro, minced

    Saute onions and garlic in the oil on med. heat until translucent. Add stock, quinoa, beans, cumin,, salt, pepper. Bring to boil, reduce to simmer for 15-20 min, stirring often. Remove from heat and stir in corn and cilantro.

    I served ~0.75C with a tablespoon of salsa and a tablespoon of low-fat shredded cheese. Also a side of Ms. Brown’s home-grown zucchini!
