Afternoon Snacking

Afternoon Snacking

Great job on your food logs this past week. In going over them, one consistent theme for many of you is the lack of balance in your afternoon snacks. Remember that just a piece of fruit is mainly carbs, so balancing it with a hard boiled egg and/or some almonds would be a good idea. Here are some healthy, easy afternoon snack ideas for you. Feel free to reply with any others that you like!

Here’s one that Ms. Campbell sent me. It looks great!!!!

    Puttanesca Deviled Eggs
(6 servings)From Moosewood Cookbook/ Kids love them too!
Add to pot of cold water:
    6 eggs
Bring to a gentle boil and cook for 10 minutes, or until hard boiled. Cool and peel of eggshells. Slice eggs in half lengthwise. Gently scoop out yolks and mash. Stir into mashed egg yolks:
    ¼-1/2 tsp red pepper flakes
    2 Tbsp. fresh basil (minced)
1 Tbsp. sun-dried tomatoes (soaked and minced)
    1 Tbsp. minced kalamata olives
1 ½ tsp. tiny nonpareil capers
    Wisk in separate bowl:
    ¼ cup olive oil
    1 tsp red wine vinegar
1 garlic clove (minced or pressed)
Fold in dressing. Salt to taste. Fill empty egg white halves with egg yolk mixture. Garnish with 12 small basil leaves.

Here’s another one from Ms. Ellet. It looks fantastic!

    Spinach Soup

1 onion chopped and sauteed in
    1 or 2 T. olive oil
    1 lb..fresh spinach
Add spinach after sauteing onion and cover…let wilt on med/low heat for a few minutes.
Put in Vitmix container or other blender.
    Add 2 c. chicken broth
Add about 1 c. fat free milk
Mix on low then high until well blended or heated.
If not making in Vitamix then heat in pan.

Add salt and pepper to taste.

If using a regular blender probably easier to make 1/2 recipe.
